you might've noticed this about me already but I have an extremely bad habit of running bleeding edge stuff within 48h of being responsible for any system even if I commit to stability
I always end up get tempted to pull in even the most irrelevent, dumb new kernel or ML framework or hardware driver feature which needs newer libraries to build and I end up upgrading. This is true even on servers I depend on for my quality of life like my plexserver (which I also run remote file store @ for even things like my remote org mode files, etc). I literally upgrade to the latest ubuntu just because I didn't wanna maintain a separate build of the newer treesitter libraries as I wanted to use the latest treesitter modules with the latest emacs build (extremely dumb I know but just the way I roll).
I really need to learn to stop doing it but it's why I started using linux as a kid so the habit is hard for me to break.
I went with XFCE just because I know by heart how to make all the customizations I like. Eventually I will try KDE if they commit to maintaining X11 support for a while longer — I have heard very good things from you and my coworkers who use it.
